When I'm teaching InDesign I make sure that what I'm teaching is based on a project that the student wants to do (f.ex. a movie poster or a CV). That way, the student gets practical experience while feeling involved in the learning process.
The teaching in itself is structured as follows. The student and I both work on separate documents and the student follows my lead while asking questions about methodology along the way. I find that this leads to minimal confusion compared to trying to give spoken directions only.
