About Ian

I have worked in the industry for over 40 years starting as a commis chef, moving up to head chef, I have worked in Michelin starred restaurants. I achieved 3 red rosettes & a Michelin Bib Gourmand as a Head chef. I taught at Colchester Institute for 18 years, I now work part-time at a private cook school. I have always cared about my team & nurtured them to achieve whilst I was a head chef, I then continued this approach into my teaching & developed a great rapport with my students whilst I was lecturing. I loved to watch them develop & grow in confidence.

About the lesson

I have been teaching Chef students cookery skills for over 18 years from classical, modern British, Asian, Desserts, pastries, bread, butchery & fish preparation. I'm a patient teacher who understands people have different abilities & learn at different speeds, I will help nurture you to achieve & learn the skills you want to continue your food journey whether it's a one-off lesson or a programme to develop your knowledge through all aspects of cooking & cuisines.

Perfect! I organised Ian to give my father an all-day cooking experience. It’s safe to say my Dad absolutely loved the experience.

Ian was a joy to organise the day with. He suggested great menu options, was proactive in sourcing ingredients and was very responsive at communicating prior to the day. He was also more than happy to drive to my Dad’s house to give the lesson there.

Then during the day itself he was a wonderful, knowledgable tutor and helped my Dad cooking a wonderful set of meals. Would definitely recommend working with Ian - 10/10!

I had an amazing day I had with Ian! What a privilege it was to spend over six hours with one of the top chefs in the country in my own kitchen being shown how to prep and cook a wide variety of delicious dishes. Ian was great company and really generous in his teaching style. It was fascinating to watch his skills up close and I learnt a lot during the course of the day.
And it was really good value for money too.

I’d thoroughly recommend Ian for anyone with an interest in good food and cooking. It was a really memorable experience and I’ll definitely be looking to organise another day with him. Thank you Ian!

I worked with Ian to build a cooking experience for my father as a retirement present. Ian devised a delicious and varied menu, and was a real expert in suggesting meals that were repeatable at home. He sourced all the ingredients himself, and was willing to travel to my Dad’s home. The experience itself was fantastic. Ian’s knowledge and personality can’t be matched, and my Dad had such a good time that he is considering doing another session.
