Nigerian Meat Pie
This meat pie is a popular snack in West Africa and Nigeria. Nigerian meat pie is a buttery, crispy, delicious snack filled with minced beef and vegetables (usually carrots and potatoes). If you have not mastered this recipe, here's a detailed way to make it.
- 1kg (8 cups) plain flour (All-Purpose Flour)
- 2 teaspoons baking powder
- 500g (1.1 lbs) Margarine
- 2 pinches salt
- ½ cup / 125 ml / 4.2 oz cold water
- 1 medium Egg
- 2 medium Irish potatoes
- 2 medium carrots
- 500g (1.1 lbs) minced meat
- 1 medium onion
- 2 cooking spoons vegetable oil
- 2 seasoning cubes
- 1 teaspoon thyme
- 2 tablespoons plain flour
- 1 cup / 250 ml / 8.4 oz cold water
- Salt to taste
Directions For Preparing The Meat Pie Filling
Cut your potatoes, carrots and onions. Fry your onions on a low medium heat for a bit and add the minced it. Then add your seasoning, add cut potatoes and carrots and cook till it is done. Set the meat pie filling aside. Now is the time to prepare the dough for the meat pie.
Directions For Preparing The Meat Pie Dough
Mix the flour, salt and baking powder. Add your margarine to the flour and use your fingertips to rub till the mix becomes like crumbs. Then add a little water and knead the dough very well. Put back in the bowl and leave to rest for 5 to 7 minutes (This makes the dough more elastic).
Final Directions For Making The Meat Pie
- Set your oven to 170°C (335°F), leave to preheat and rub margarine on the insides of your oven tray
- Knead the dough and make round cuts on your rolled dough
- Scoop some meat pie filling into the centre of the round cuts (the quantity should be such that you can comfortably close the dough without overflows).
- Rub your broken and mixed egg on the inside edge of the cut meat pie dough.
- Fold one part of the dough to meet the other end and use a fork to press the 2 edges together to close tightly and place into the oven tray and repeat the previous step till all the cutout dough is exhausted.
- Rub the egg on the meat pies. This gives the meat pie a golden brown look when done.
- Set the tray in the preheated oven and bake for 30 to 40 minutes.
This is also a popular snack in Nigeria. It is a simple recipe of boiled egg wrapped in sausage, coated in breadcrumbs and baked until crisp and golden.
- 4 medium eggs
- 500g sausage meat
- 1 cup bread
- 1/4 cup flour
- 1 teaspoon salt
- 1 teaspoon dry chilli pepper
After you boil your egg and set it aside, add salt and chilli powder to the sausage meat. In 3 separate bowls, place flour, beaten eggs and breadcrumbs. Roll the boiled eggs into the flour and wrap them into the sausage meat. Then roll it into the beaten eggs and the breadcrumbs.
Then heat your oven, grease your tray and bake at 200 deg C for 20-30 minutes.
Chocolate cake is one dessert that almost everybody loves. It is one yummy cake that is mostly in the dessert menus in a restaurant. Whether it’s with milk chocolate, white chocolate, or dark chocolate, everyone loves a bit of chocolate cake. This recipe is great for beginners and pro bakers.
You’ll need a few ingredients:
- 250 grams of butter.
- 250 grams of dark chocolate.
- 200 grams of sugar.
- 70 grams of flour.
- 4 eggs.
Preheat the oven to 350 degrees and grease your pan. After you’ve melted the chocolate and butter, beat the eggs and sugar into a white foam. Mix the two. Put the mixture into the cake tin and bake for 25 minutes, until the toothpick inserted in the centre comes out clean.
Making a jam isn’t the easiest thing to do but every aspiring baker or pastry chef should learn how to do it. You can make jams out of almost any fruit. However, we will be giving a recipe for the strawberry jam which you can replicate with almost any fruit of your choice.
- 1.5kg of Strawberry
- 1.5kg of sugar
- 1 sachet of gelatine
You’ll need almost 2 hours to prepare this recipe, so start by blending the fruit and mixing in the sugar. Then mix the gelatine into two tablespoons of sugar. Boil the strawberry mixture and after three minutes, add the gelatine-sugar mixture.
Remove the foam that forms and fill up some jam jars. Close them and turn them upside down to get the air out. You then leave your jam for two days to finish before tasting it.
Vanilla Pound Cake
This is one of my favourite types of cake. It is a simple cake that is both easy to make and doesn’t take very long. All you have to do is have the right measurements, mix all the ingredients and bake at the right temperature.
To make this ingredient, you will need:
- 250g Plain flour
- 220g Butter
- 200g Sugar
- 60ml Milk
- 5 Medium Eggs
- 1/2 tbsp Baking Powder
- 3/4 tbsp Vanilla Extract
Preheat the oven to 350ºF/180ºC and grease your pan with some butter and dust it with some flour. Mix your flour and baking powder, then mix your butter, sugar, eggs and vanilla. Finally, add the flour into the mixed butter and also add your milk before putting the mixed batter into the pan and straight to the oven for 45- 50 minutes.
Insert a toothpick and if it comes out clean after 45- 50 minutes, bring out of the oven, leave it to cool and your cake is ready to be eaten.
To bake your blueberry muffins, you’ll need muffins or cupcake pans. You can add things for other flavours like chocolate, raspberries, almonds, cashews or raisins. The important thing is to get the dough right. This is another easy recipe for beginner bakers.
- 120 grams of sugar.
- 125 grams of butter.
- 2 eggs.
- 200ml of skimmed milk.
- 1 teaspoon of baking powder
- 100 grams of blueberry.
- Butter for the moulds.
Preheat your oven to 200ºC and start by melting the butter. Mix the flour, sugar, and baking powder. Mix the eggs and milk, add them to the flour mixture and then add it all to the melted butter. After this process, then add your blueberries into the batter and mix them all.
Finally, put the mixture into the muffin moulds or cupcake pans and bake for 20 minutes at 200ºC. Insert a toothpick and if it comes out clean, it is ready.
Vanilla Mousse With Chocolate Chips
This is a very easy recipe to make. This mousse gets its stability from the cream cheese. You can decide to try it with a different extract like chocolate ( if you want to make chocolate mousse ) and add a few drops of food colour to get a mousse with fruity or minty flavours.
- 4 ounces (1/2 package) cream cheese,
- 1/2 cup sugar,
- 1 1/2 cups heavy cream
- 1 tablespoon Vanilla
- 50g chocolate chips
Beat cream cheese and 1/4 cup of the sugar in a large bowl until smooth and creamy. Beat heavy cream, remaining 1/4 cup sugar and vanilla in a large bowl with an electric mixer on medium speed until stiff peaks form. Add 1/2 of the whipped cream mixture to the cream cheese mixture; stir until well blended. Gently stir in the remaining whipped cream mixture and cover.
Add your chocolate chips on top, then refrigerate until ready to serve.
Waffles are delicious and a great recipe that can easily be made for breakfast.
You’ll need a few ingredients:
- 300 grams of flour.
- 2 eggs.
- 1 sachet of baking powder.
- 200ml of milk.
- 90 grams of butter.
- 50 grams of sugar.
- 1 sachet of vanilla sugar.
- Bananas - optional. Adding banana tweaks the taste of bananas waffles.
Mix the flour and the baking powder. Then slowly add the milk so that there aren’t any lumps. Melt the butter and add it to the mixture. Then beat the eggs and add them and the sugar to the mixture.
If you want to add bananas, mash them and add them to the mixture. You can now add the batter to your waffle iron.
There are several ways by which doughnuts can be prepared. Various countries with various styles. Some people fry, gaze it with sugar, bake and even add jam into them. In Nigeria, the commonest way of making it is by frying the dough.
- 2 cups (250g) Flour
- 2 tsp yeast
- 3/4 cup (1 tin) Evaporated Milk Or powdered milk dissolved in 3/4cup of water.
- 2 Tbsp melted margarine
- 1/2 cup (120g) Sugar
- 1 egg whisked
- 1/4 tsp salt
- 4 cups Groundnut Oil for deep frying
- 1/4 cup warm water
Add salt and yeast to the flour then add sugar and margarine, and rub into the flour. Make a well in the flour and pour the beaten egg followed by warm milk. Mix until u form a dough and knead for about 15 minutes. Place the dough in a bowl, cover and put in a warm place, leave for about 1 hour. After an hour knead the dough again for few minutes.
This recipe is delicious and quick to prepare. This is fast becoming one of the bread recipes a lot of people enjoy making and buying in Nigeria. You can decide to add raisins, nuts or anything you feel will make you enjoy your banana bread.
- 3 ripe bananas, mashed
- 1 cup white sugar
- 1 egg
- ¼ cup melted butter
- 1 ½ cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon salt
Preheat your oven to 325 degrees and grease your pan. Combine bananas, sugar, egg, and butter in a bowl. Mix flour, salt and baking soda in a separate bowl; stir into banana mixture until batter is well mixed. Pour batter into the greased loaf pan. Bake in the preheated oven for 40-50 minutes until a toothpick inserted in the centre of the bread comes out clean.
Another easy recipe you can learn on your own with the knowledge of the above ones is oat cookies. The ingredients and process are similar to that of banana bread. Replace the flour with oats and you can actually make banana oat cookies. Roll dough into walnut-sized balls, and place 2 inches apart on cookie sheets and put in the oven.
